Suggest a better descriptionIn a nonstick saucepan, lightly cook mushrooms in 1 tbsp. water to wilt. Add rice and stir until combined. Put broth in another saucepan and bring to a simmer. Stir 2/3 cup broth into the rice. Stir until all the broth is absorbed. Continue adding broth in small quantities, stirring regularly, until absorbed. When this process is finished, add cheese and season with salt and pepper to taste.
