roasted potatoes
Preheat oven to 425.
Cut onions into 1/4" half rounds. Place cut potatoes and onions on baking sheet. Add the olive oil, mustard, 2 tsp salt, and pepper and toss together. Bake for 50 minutes, or until potatoes are lightly browned. Toss periodically to make sure they brown evenly.
Served sprinkled with parsley and a little extra salt.
