Prepping Ham Bone Broth
Place ham bone in large kettle with 12 cups of water. Add 1 onion slices and a couple of stalks of celery one stalk of dried thyme.
Cook on low for 3 hours to make broth. Remove ham bone and take the good ham off the bone. Strain broth.
Prepping Navy Beans
Soak the dry beans in water overnight.
Take 10 cups of broth and the strained beans and bring to a boil. Add 2 t. of baking soda to soften beans. Let sit for a few hours.
Test beans to see if tender.
Put 3 T. of olive oil in a skillet. Sautés the onions, celery and carrots for 15 minutes until tender. Add the chopped potatoes for another 7 minutes.. When starting to sauté, sprinkle the cumin, red pepper flakes over mixture cooking. Add the chopped garlic for 2 minutes at the end.
Put this mixture in the soup.
Add the ham.
Cook for 1.5 hours.
