Suggest a better descriptionPreheat oven to 400. Place the oats and the yogurt in a bowl and let stand for about 30 minutes.
Sift together the flour, baking powder, baking soda, salt, and cinnamon. In a separate bowl, lightly beat the eggs. Stir the eggs into the yogurt mixture; mix in the vanilla, sugar, and vegetable oil.
Pour the yogurt mixture into the flour mixture and stir just until combined. Do not overmix. Fold in the raisins. Bake for 15 to 20 minutes. When done, drizzle honey over each muffin and top with the toasted oats. Let cool.
