Mix the cornstarch, cocoa powder, sugar, salt and the beaten egg yolks in a pan on the stove. Then, gradually add the milk while continuing to stir over medium high heat. Beat and cook until the mixture is smooth.
While continuing to stir, add the vanilla. The mixture will take 10-15 minutes to thicken. Once thickened, pour into a cooled, pre-baked pie shell.
Place in the refrigerator to set and chill for several hours. Add whipped cream or meringue if desired.
