Easy, spicy family recipe for Beef Enchiladas
brown ground beef and onion & add 1/2C of the sauce.
soften corn tortillas by frying in hot oil individually or by spraying/brushing with oil and warming on sheet in oven @ 350 for 10-15min.
grease 9x13 casserole dish
In each tortilla add about 2T ground beef & a sprinkle of cheese. Roll & arrange in single layer in the dish.
top with sauce and make sure sauce settles between each enchilada & covers all tortillas.
Bake @ 350 for 30 min or until bubbly.
Top with remaining cheese & bake until melted.
