2. Heat olive oil in a large skillet. Sauté chicken until browned on all sides.
3. Remove chicken and set aside. Add onions and pepper. Sauté until softened.
4. Add corn and cannellini beans. Mix thoroughly.
5. Return chicken to skillet and mix with vegetables.
6. Pour in chicken broth and salsa. Mix well.
7. Add zest and juice from orange.
8. Add arugula. Stir until wilted.
9. Serve with rice (optional).
