From The Unofficial Hunger Games Cookbook
1. Preheat oven to 350F. Lightly oil a muffin pan containing 12 regular-sized muffin cups.
2. Combine flour, baking soda, baking powder, salt and both sugars in a large bowl. Stir in orange juice, 1 cup melted butter and eggs.
3. Pour batter into 12 muffin cups.
4. Blend 1 tablespoon melted butter, dark brown sugar, ground cinnamon, and vanilla extract. Sprinkle on top of each muffin. Bake at 350 for 25 minutes or until inserted toothpick comes out clean.
The muffins were really good but didn't have much orange flavor. Next time I'm going to try fresh squeezed juice and some orange zest.
Also, it says to sprinkle the topping on but it was pretty runny. I think I may try about 1 Tbsp of flour next time to make it more of a crumb topping.
