This always gets eaten in a snap! A favorite. Note that one frozen loaf of bread makes TWO pepperoni bread rolls. Yields 12 servings only if everyone has just one piece. Most people take multiple pieces!
NOTE: The recipe makes TWO loaves of pepperoni bread. One frozen loaf is divided in half and each half is used to make a separate pepperoni loaf!!! The other ingredients are the TOTAL you will need for two loaves.
Thaw the frozen bread loaf and when thawed cut it in half to give yourself two parts which can be mounded into balls.
Preheat oven to 370 degrees F.
Roll each half into a 10-12 inch circle. Flour your rolling surface so that the loaves do not stick and tear.
Mix 2 eggs with 1 cup of grated Parmesan and spread it over one of the rounds. Repeat with the remaining 2 eggs and Parmesan for the second round.
Layer half of the pepperoni slices on each round.
Cover the pepperoni slices with the shredded mozzarella being careful not to mound it up or spread it too close to the edges of the rounds.
Sprinkle each round with 1/4 teaspoon of oregano.
Roll each round up carefully, tuck in the edges and place on parchment paper which has been used to line a baking sheet (to prevent sticking!).
Bake at 370 degrees F for 20-25" or until the rounds are browned but not burned.
Best served hot from the oven!
