For the brightest pesto, give the basil a quick blanch for a few seconds in boiling water and immediately shock it in a bowl of ice water before pureeing into sauce.
Preheat oven to 350. Toast 1/2 cup pine nuts for about 5-7 minutes, tossing halfway through.
Cool then transfer to food processor. Add garlic and Parmesan, process and pulse until finely ground,about a minute. Add basil and, with the motor running gradually pour in EVOO in a steady stream; process until pesto is mostly smooth. Pulse in kosher salt.
