Delicious way of blending sweetness of the pineapple with pork
Cut off top of pineapple and peel.
Cut in half vertically
Remove core from the two halves
Season pork with Cajun season and brush on some BBQ sauce
Place pork into pineapple and cover with other half
Tie halves together with twine
Place half of bacon across top and secure with toothpicks.
Turn over and place other bacon on top and secure.
Brush lightly with BBQ sauce.
Place at opposite end of fire on covered grill on smoker
Smoke for about 4 hours at 225 degrees. Check internal temperature
With probe.
Remove and let rest for few minutes.
Cut across in 1 inch sices and serve
