In a large resealable plastic bag, COMBINE the first 11 ingredients. ADD pork. SEAL bag and turn to coat; refrigerate for at least 2 hrs.
Meanwhile, combine the relish ingredients in a bowl. Let stand at room temperature for 1 hr.; refrigerate until serving time.
DRAIN and discard marinade. Coat grill rack with nonstick cooking spray before starting the grill. GRILL pork chops, COVERED, over Med-High heat for 6 - 10 mins. on each side or until a meat thermometer reads 160?.
