Traditional pumpkin pie, I love to use an Italian heirloom pumpkin I found at Garden Treasures farm in Arlington. It has an intense pumpkin flavor, brilliant color, and super creamy texture.
Preheat oven to 375°°F.
Whisk together pumpkin, cream, milk, eggs, brown sugar, spices, and salt, then pour into prepared pie shell.
Bake pie in middle of oven 45 to 50 minutes, or until filling is set but center still trembles slightly. (Filling will continue to set as pie cools.) Transfer to rack and cool completely. Cover tightly with plastic wrap and store in refrigerator.
Be sure to use fresh baked and pureed pumpkin from a sugar pie pumpkin and not canned pumpkin.
