1. Heat milk to 72 degrees (:20)
2. Add Calcium Chloride - stir 30 seconds
3. Sprinkle Culture - wait 2 minutes and stir (:25)
4. Keep warm at 72 degrees for 4 hours
5. Add rennet - stir 30 seconds
6. Keep warm at 72 degrees for 10 hours.
7. Cut 1.5 inch checkerboard. Rest 10 minutes
8. Cut horizontal about 1.5 inches Rest 10 minutes
9. Stir slowly for 5 minutes
10. Laddle with unslotted spoon into 2 cheese cloth lined forms. Small extra one if you like.
11. Cover and let sid for 90 minutes.
12. Flip and let sit for 8 hours.
13. Flip without wrap for 4 hours, flip one more time for 4 hours.
14. Brine at room temp for 1 hour each.
15. Let dry at room temp for 4 hours.
16. Place in cave for 5 days minimum. 30 days maximum. Wipe with brine every other day.
