Suggest a better descriptionSaute the red onion in the butter until softened. Add the garlic and saute for 1 minute. Add the sausage and break up the sausage into large chunks, and cook until the sausage is almost cooked. Add the paprika, and season to taste with salt and pepper.
Add the rice to the pan, and stir to coat with the oil and juices. Deglaze the pan with the white wine and scrape the bottom of the pan. Add the stock, bring to a boil, then reduce heat and simmer until the rice is cooked and the moisture is mostly absorbed - 15 - 20 minutes, stirring occasionally.
Remove from the heat, and top the rice with the scallions, tomatoes, and parsley.
