Suggest a better description1. Heat oil in a large pot over medium heat.
2. Add the onions, carrots, celery, chili and salt and cook for 5 minutes, stirring a few times, until softened.
3. Add the the rest of the ingredients and stir through.
4. Increase the heat to high and bring to a boil.
5. Then reduce the heat to medium-low and simmer, covered with a lid, for 2 hours.
6. After 2 hours, break the beef apart into shreds or smaller pieces, and cook the ragu uncovered for 5-10 minutes over high heat to evaporate some of the liquid and to thicken the sauce slightly.
7. To make the sweet potato noodles, preheat the oven to 400°F.
8. Use a vegetable spiralizer or a kitchen peeler, cut the sweet potatoes into thin noodles.
9. Place the noodles in a baking tray and drizzle with a little olive oil.
10. Sprinkle with salt and garlic powder and place in the oven for 10 minutes, stirring gently half way through.
11. Serve the sweet potato noodles with beef ragu as you like, topped with freshly chopped parsley.
