Suggest a better descriptionCombine herbs and spices in a small cheesecloth spice bag (available in any kitchen supply store). Place bag and 6 quarts of water in a medium stockpot (at least 8 quarts). Bring water to a rapid boil over high heat. Lower heat slightly, but continue boiling for at least 5 minutes to infuse the water with herbs and spices. (You will smell them.) Meanwhile, make an ice bath by placing 3 trays of ice cubes and 3 cups of cold water in a large mixing bowl.
Add shrimp to boiling, spice-infused water and cook until just tender, about 3 minutes. Using a slotted spoon to drain as much water as possible, remove shrimp and immediately plunge them into ice bath. When shrimp are cooled, drain and peel (or leave shell on for do-it-yourself style).
