Alfredo sauce prep:
Melt butter in saute pan; add onion & garlic, saute until translucent. Add flour & mix well. Heat stock in pot and add to roux. Stir well and often to avoid lumps. Mix salt and white pepper with half & half; add to stock mixture. Bring to boil & remove from heat; strain through colander & add lemon juice.
Main dish prep:
Pre-heat oven to 350.
Over medium heat, slowly melt garlic butter in a sauce pan, then add sliced mushrooms and saute until soft. Add Pulled Smoked Chicken and stir. Slowly add Alfredo sauce and grated Parmesan cheese. Mix until the Parmesan cheese melts. Add penne pasta stir, red peppers, scallions and mix well. Place pasta mixture in an oven safe bowl. Cover with Shredded Mozzarella and garnish with a few red peppers and scallions. Bake in pre-heated 350 degree oven until cheese is melted and bubbly. Top it off with a little more shredded Parmesan cheese as a garnish.
