1. In a small bowl, combine the brown sugar, paprika, garlic powder, onion powder, salt, black pepper, and finely chopped bird's-eye chilli (optional) to create a dry rub for the pork shoulder.
2. Remove the rind from the pork using a filleting knife.
3. Place the pork shoulder in the slow cooker bowl and rub the dry spice mixture all over the pork shoulder, making sure to coat it evenly.
4. In a separate bowl, mix together the BBQ sauce, apple cider vinegar, chicken stock, and whisky.
