Traditionally the meat is served with fried potatoes or rice pilaf for an evening meal. The lettuce and tomato, dressed with the sauce, and the bread on the side. At lunch time they would eat the leftovers as a sandwich as this recipe describes.
Place meat in a gallon zip lock bag. Mix the Oil, Lemon Juice and spices together and pour over meat. Place the bag in a bowl and marinate for at least 1 hour in the refrigerator or overnight.
Make the sauce and prepare the toppings.
Toppings:
Shredded lettuce
Chopped tomato
Tzatziki Sauce*
To prepare sauce:
In a small bowl, whisk yogurt and lemon juice till smooth. Slowly drizzle in the olive oil
while whisking vigorously to make a thick sauce. Stir in the garlic, salt, pepper, oregano and mix in the cucumber. Refrigerate.
To prepare the Meat:
Heat skillet over medium heat with a Tbsp. of Olive Oil and grill the meat until fully cooked. Let cool to touch and cut in to 1 inch pieces. Place back in skillet and reheat.
To assemble (Gyro Style) Sandwiches:
Heat flatbread on a skillet, open gas burner or Microwave till soft and warm. Place meat on bread and top with the lettuce, tomato and sauce. Fold over like a taco and enjoy!
I like to serve this with a bowl of soup or salad.
