A traditional but simple bolognaise recipe. You can use the sauce to create pies, lasagnes and other yummy treats too!
Heat oil in a large frying pan over medium heat. Add onion and garlic. Cook, stirring, for 5 minutes or until tender. Increase heat to medium-high. Add mince. Cook, stirring, for 5 minutes or until browned. Add in celery and carrot and cook, stirring, for 2 minutes before adding mushrooms and cooking for a further 2 minutes.
Add tinned tomatoes, stock, bay leaves and various herbs. Stir to combine and crush up tomatoes slightly. Reduce heat to low. Partially cover. Simmer, stirring occasionally, for 45 minutes.
Season with salt and pepper. Remove bay leaves. Toss with pasta. Serve
Top with grated parmesan and serve with fresh crusty bread for a real treat.
