Strata is best if allowed to soak in overnight. Fewer than 20g of carbs.
Cook bacon in large skillet until crisp. Transfer to a plate, drain skillet, retaining 1 1/2 T drippings in the skillet. Finely chop bacon and set aside.
Add onion and garlic to drippings over medium-high heat. Cook until onion is browned and tender. Add spinach until it wilts, stirring constantly.
Toss together bacon, onion mixture, bread cubes and cheese in a large bowl, then arrange evenly in an 8" baking dish, coated with cooking spray.
Combine milk, yogurt, eggs, egg whites, mustard, salt & pepper in a large bowl; stir with a whisk until well combine. Pour evenly over bread mixture. Cover and chill overnight.
Preheat oven to 350. Uncover baking dish and let strata stand at room temp until oven heats. Bake strata about 1 hour, until top of strata is browned and a knife inserted in center comes out clean. Let stand 5 minutes before serving.
