From scratch
Add a bit of water at the bottom of a saucepan and add the spinach. Cook with lid on until ithere is no moosture left. Stir occasionally.
Meanwhile prepare dough: place 150 gr of flour, yeast, a pinch of salt, a pinch of sugar and some spray oil. Stir and gradually add hot water from the tap. Stir as you go until you get an elastic dough. Next add another 50-80 gr of dough and stir with a fork first then kneed it adding a bit more flour to get a nice dough. Leave it while you prepare the quiche's contents:
Preheat your oven now (200 degrees Celsius). Add 2 eggs, 1 tub of cottage cheese, 1 tub of thick cream (crème fraîche if possible), 50 gr of grated cheddar (or other similar cheese) , pepper and salt freshly ground. Stir and add the cooked spinach ( there should be no spinach water). Stir.
Roll out the dough and place in a dish which has been lightly sprayed with oil first.
Add the content and place into the oven.
Check after 35 minutes - you may need 40- 45 minutes if you do not have a fan-heat oven.
Let it cool down for 10 minutes.
Reheating instructions: preheat your oven for 15 minutes then place into the oven for 10 minutes.
