Jardiniere de legumes printaniers
Slice the carrots and dice the turnips.
Melt the butter in a large pot. Add the carrots, turnips, green beans, peas, lettuce leaves, 2 tablespoons of water, parsley or chervil (tied together with string), salt, and pepper. Stir. Cover with a deep plate filled with cold water. Simmer 20 minutes.
Then add the potatoes, cut into dice. Cook another 30 minutes. Add more water to the plate during cooking. Before serving, discard the parsley, then stir in the creme fraiche.
