Sticky Date Pudding ~ Sugar Free/Gluten Free

Combine dates with water in a saucepan. Bring to boil then simmer 3 minutes. Add Baking Soda, stir and remove from heat. Set Aside. Cream together ~ with electric beaters ~ 1 stick butter and 1/4 C. Maple Syrup. Add eggs, one at a time, beating after each addition. Add Vanilla. With beaters on low, add flour and salt. Drain liquid from dates and RESERVE liquid. Begin adding reserved liquid to the flour/butter mixture slowly until mixture is the consistency of thick pancake batter. Discard remainder of liquid. Add the dates and stir. Pour into a buttered 9 inch round cake pan and bake 40 minutes @ 325 degrees (until center is done).
Meanwhile, combine 1 stick butter, 1/4 C. Whipping Cream, 1/2 C Maple Syrup and 1/2 t. vanilla in a sauce pan. Bring to boil, then simmer 3 min. Remove from heat.
When cake come out of oven, poke holes in cake, pour 1/2 Caramel sauce over. Serve remaining sauce with cake. Whipped topping can be added when serving.
