In a bowl, mix the mince, vermicelli, onion, garlic, eggs, hoi sin sauce, nu?c mam, pepper, MSG, oil.
Chill.
[Prepare tomatoes]
Slice the tops off the tomatoes and reserve. Scoop out most of the pulp with a teaspoon, being careful not to break the skin. Put away the pulp and the juices for another recipe. Sprinkle the insides of the tomatoes with a little sugar to take away the acidity, then place them upside down to drain for 5-10 minutes.
Fill the tomatoes.
[Cook tomatoes]
Heat 3-4 T oil in a large frying pan, add the tomatoes upside down, then gently cook on max heat until yellowed. Turn over, reduce heat then cover using the domed lid.
When the meat is browned, remove lid then increase heat to high (not max) for 5 minutes. Add nu?c mam.
Turn off heat when there is sauce left in the pan and cover again.
