Mix buttermilk and bread and let soak. If not really mushy, add milk (do half buttermilk have whole?). Let sit while cooking onion.
Melt butter over medium heat. Add onion and pinch of salt. Cook 5-7 minutes or until soft and almost golden. Remove from pan and set aside.
Mix bread slurry with onions, egg, garlic, salt, allspice, pepper, and nutmeg. Add meat and blend really well.
Shape into 63 balls and arrange 9 x 7 on the sheet. These would be 25 gms per ball. Put on silpad (or parchment) lined baking sheet. Put in oven for about 25 minutes, turning after 15. If all balls don't fit on one sheet, brown the rest in a pot in butter (about 7 minutes). Remove balls from pot.
For sauce, add remaining butter (up to 4 T) to pot and melt over medium heat. Add flour and cook for about 3 minutes until golden. Add wine (or jelly or sugar).
Whisk in broth (cold broth for no lumps!). Add cream and Worcestershire. Bring to boil and cook and begin to thicken. Set on simmer and add cooked meatballs. Add any scraped up goobers from baking sheet. Cook meatballs in gravy until it is at desired consistency.
Serve as an appetizer or with lingonberry or cranberry sauce and mashed potatoes.
