A pumpkin bisque with sweet undertones and a little fiery bite.
Preheat oven to 350
Cut pumpkin in half and remove the seeds and stem.
Place pumpkin halves in a large baking dish with orange juice and cover tightly with foil.
Bake for an hour or until the pumpkin is soft.
In a large saute pan warm desired amount of vegetable oil.
Saute prepped jalapeno, onion and garlic until soft.
Add oregano and cumin and saute for another 2 minutes or until it becomes fragrant.
Remove pumpkin from the oven and let it cool. Do not throw away the orange juice!
When the pumpkin is cool enough to handle scoop the soft meat away from the skin.
Place pumpkin, orange juice, vegetable broth and the cooked onion garlic & jalapeno mixture in a food processor.
You might have to do it in shifts if you have a smaller appliance.
Puree until smooth.
Place the mixture in a large sauce pan and add the cayenne, heavy whipping cream and salt to taste.
Let simmer for 15-20 minutes allowing the flavors to marry and serve.
I usually garnish this with a sprinkle of freshly grated Parmesan cheese and/or toasted pumpkin seeds.
