Pre-heat oven to 325?
Mash potatoes. Add pineapple and remaining ingredients. Pour into 2 quart shallow baking pan.
Make crunchy topping.
Mix sugar and butter in medium bowl. Add crushed cornflakes and mix well. Sprinkle over potatoes.
Bake uncovered for 40 mins. or until brown is brown and crispy.
