This curry is full of flavours. The cooked spices and the lime are amazing and add so much punch to the whole dish. Loved by all my guests.
1. Preheat the oven to 200 °C, fan setting
2. Cut the sweet potatoes into cubes, about 2cm wide.
3. Place the sweet potatoes in a large baking tray, along with the drained chickpeas, a drizzle of olive oil, turmeric, turmeric & ginger mix, ginger, cinnamon, and a pinch of salt.
4. Give everything a really good mix before roasting for 30 minutes.
5. While that cooks, place 2 teaspoons of coconut oil in a large pan over a medium heat.
6. Once melted, add the black mustard seeds, and cumin seeds, and cook for about a minute. They should start to pop and crackle.
7. Add the chopped, onion and garlic and cook for another 10 minutes until soft. Make sure to keep stirring it through, so that they don't burn.
8. Once the sweet potatoes have cooked, add them to the pan, along with the lime juice and coconut milk.
9. Bring the pan to the boil, before reducing the temperature and leaving to simmer for 10-15 minutes, until the sweet potatoes are perfectly tender.
10. Finally stir through the spinach and let it wilt, then serve with a side of brown or jasmine rice.
