Suggest a better descriptionPreheat oven to 450*. Generously coat large baking sheet with olive oil (about 1-2 tbs). Lay sweet potatoes in one layer. Sprinkle with salt & pepper. Roast, w/o disturbing, for 15-20 mins. Carefully flip each piece (if they don't release easily from pan, allow to cook a little longer). Sprinkle with additional salt & pepper. Cook another 10 mins or until undersides match the tops.
Meanwhile, in a large bowl, combine ingredients: pecans through goat cheese. In a small bowl, whisk vinegar, 4 tbs olive oil and mustard. Pour half mixture over salad mixture.
When potatoes are done, arrange on serving platter. Top each coin with spoonful of salad mixture. Drizzle remaining dressing over tops, according to taste. Serve immediately.
