Suggest a better descriptionCut sweet potatoes to medium thickness fries. Let them soak for an hour to half a day. Pre-heat oven to 425. Put 1 tbsp. flour of cornstarch in a plastic bag and shake off a handful of fries before adding to bag. Shake bag until lightly coated. Oil the cookie sheet and drizzle 2+ tbsp. of oil on fries and toss to coat. Arrange fries on sheet so there is space between them.
Put fries in preheated oven for 15 min. Flip fries, and return to oven for 5 min.
