This recipe is a tasty, inexpensive and easily made favorite of myself and my family
Put the egg, salt, buttermilk, sugar and vanilla extract in a blender; give it two quick shots of power -- no more than a second each -- and then add the clarified butter. Now, give it one more quick shot to mix in the butter. Finally, add the flour to the mixture and give two quick shots of power, then, use a spatula to scrape the sides of the blender and give one more shot. Allow the batter stand in the refrigerator for 25 minutes.
NOTE:The blending should be kept to the absolute minimum needed to mix the ingredients together.
Heat your skillet to 375f /190c. You can test this with drops of water which should start hopping around the pan and disapear almost immediatly. Once the pan has reach the desired temperature, grease it with 1 tablespoon of butter (repeat for each batch) and pour in you batter. keep the size of the spread to about 10cm/4in for best results. Wait until bubbles apear over the entire surface of the pancake and the edges apear somewhat dry before flipping the pancakes. Once flipped, give the pancakes another minute or until they are a lovely golden brown colour.
Top with a little butter, fresh fruit, sirup, or jam of your choice and enjoy!
Do not over mix The batter!
Make sure you pan is hot enough.
Allowing the batter to settle, although not strictly neccesary, does ensure a better end product.
