Warm milk in the microwave for 45 seconds, to around 110 degrees. Pour into mixing bowl and sprinkle yeast over the top. Add the sugar, egg, yolk and melted butter. Mix until combined. Stir in flour and salt with a wooden spoon until a dough begins to form.
Place dough hook on stand mixer and knead on medium for 8 minutes. Dough should form a ball and be slightly sticky. If it’s sticking to the bottom of the bowl, add 2 tablespoons more bread flour.
Transfer dough to a well-oiled bowl, cover with a towel and allow to rise for 1 - 1 1/2 hours, or until doubled.
After doubling in size, transfer to a well floured surface and roll our to 14” x 9” rectangle. Spread soft butter over dough, leaving 1/4” at the far side of the dough.
In a small bowl, mix the brown sugar and cinnamon. Use your hands to sprinkle over the buttered dough, then rub the brown sugar mixture into the butter.
Tightly roll the dough up, starting at the 9” side and place seam side down, sealing the edges. You may want to cut off each end since they won’t be as full of filling.
Cut into 9 pieces, about 1” thick, with a serrated knife or floss.
Place into a greased 9”x9” pan, lined with parchment. Cover and let rise 45 minutes.
Preheat oven to 325 degrees. Remove cover and bake 20-25 minutes, until SLIGHTLY golden brown. Underbake a little so they stay soft in the middle. Cool 5-10 minutes before frosting.
Combine cream cheese, butter, powdered sugar and vanilla with a hand mixer until smooth and fluffy. Spread over cinnamon rolls.
