Has a great texture. A little denser than most quick breads. Fantastic Flavor! It's a must try!
Toast coconut on a cookie sheet till its nice and tan. Set aside to cool. Mix all the dry ingredients in a large mixing bowl then stir in the coconut. In a smaller mixing bowl scramble the egg and add milk and vanilla. Make a well in the dry ingredients for the milk mixture and gently fold it in. Pour into a loaf pan ( spray with Pam first ) Bake for 40 to 50 min till a tooth pick comes out clean.
Enjoy this plain or its great lightly toasted with a little butter also.
