Sift the gram flour into a bowl, add the salt. Pour in the water, stirring constantly, to form a thin smooth batter. Cover with a damp cloth and let rest in a warm place for at least 2 hours. Preheat oven to 425 F. Stir 3 tbs of the olive oil into the batter. Put the remaining oil in an 8x8" baking pan, then put the pan in the oven briefly until the oil is very hot. Pour in the batter, and arrange the topping ingredients on the surface, sprinkling the surface evenly with each turn. Bake for about 15 minutes, until golden and crisp. Serve hot or at room temperature.
Variations
Lemon and Zucchini Farinata
Prepare the farinata, but omit the topping. In its place, over medium heat, cook 1 small onion in 1 tbs olive oil until soft. Add 1 sliced medium zucchini, 2 medium garlic cloves, 1 tbs chopped fresh parsley and the zest of one small lemon. Cook until the zucchini is tender, season with salt and pepper. Use to top the farinata.
Herbed Red Onion Farinata
Prepare the farinata, omitting the topping. In its place, over medium heat, cook 1 sliced large red onion in 1 tbs each chopped fresh parsley and sage. Cook for 2 minutes, then season with salt and pepper. Use to top the farinata.
