A delicious hot sauce with a blend of pineapple, mango, lime, and cinnamon.
1. Chop up the fermented ingredients to fit 2-2 quart mason jars. Place ingredients into the jars. Make sure to keep them in equal portions in each container.
2. Crete a 3.0% brine with sea salt. Pour over the ingredients till the liquid is at the top. Then seal it up and place in a place away from direct sunlight for between 2-4 weeks.
3. Once you feel satisfied with the amount of time to drain out the fermented ingredients. Save the brine as you might need it in a bit.
4. Mix together the fermented and other ingredients together in a pot.
Optional step: If you want to make it shelf stable to boil and let it simmer for 20 minutes. Fermenting creates a probiotic environment which if you are consuming it yourself then keep it in the refrigerator. If you are giving it out to think about doing this step.
5. Blend the ingredients till smooth.
Optional Step: you have a few options with consistency. Leave it, add more juice to make sweeter (ratio of 2:1 pineapple juice and apple cider vinegar) or add brine for heartier flavor (start with 1/2 cup and go from there).
6. Once satisfied with the consistency and flavor to bottle and use!
