Super yummy - always a hit!
Preheat oven to 325 degrees. Beat eggs until light. Add vanilla, zucchini, oil, and sugar and mix thoroughly. In a separate bowl, combine the remaining ingredients. Blend both mixtures. Pour into two well-greased loaf pans. Bake for about an hour or until a toothpick comes out clean. (for muffins, bake about 20 minutes)
Cooks Notes:
" Add 1 C. Chopped Walnuts
" For muffins, bake at 350?for about 25 minutes
